Why local first
Your inventory is a list of what you own and where it is. Keeping it on your own network means no vendor outage, price change or breach decides whether you can see it.
What still uses the internet
Square sync, emails you send through your own SMTP and backups to your own drive. The inventory itself does not leave your network.
Licence checks
Capsultory checks your product key, which carries only licence details. Your inventory never goes with it.

Every plan starts with a 14 day free trial. Capsultory Retail is $99 USD per store per month, flat, with unlimited users, PCs and tills.
